Gnocchi at lunchtime

A quick tasty gnocchi lunchtime meal made up of just 5 ingredients.



Takes only minutes to prepare and will warm you up, not to mention packing in:


Magnesium to help you sleep

Omega 3 to balance inflammation

Vitamin K for bone health


Recipe

250g packet gluten free gnocchi

3/4 of a 50g tin anchovies

1 small onion roughly sliced

Large handful of green leaves (I used beetroot leaves and chard)

Splash of water


Method

⭐️ Add a tsp of the anchovy oil to a frying pan

⭐️ Throw in the onion and fry for a minute on a medium heat

⭐️Add all other ingredients and cook on a medium heat for 3-4 minutes, stirring a couple of times
