Post Exam Snack

Exam season is in full throttle in our house 😩 and these fruity, crunchy, flapjacks were rustled up in preparation for the daily kitchen raid that occurs when the boys return home, ravenous.


Packed with seeds, oats, fruit and coconut, these bars are a great source of protein to boost energy and brain 🧠 function after a busy day. The high fibre levels ensure blood sugars don’t sink soon after eating, to see your teens (and you!) through to dinner.


⭐️ Here’s the recipe. They taste great when still warm from the oven. 😋

Ingredients

3 mashed bananas

7 dates stoned and chopped

Handful of frozen blueberries

2 tbsp spoons of crunchy peanut butter

1 dessert spoon of honey

1 tbsp dedicated coconut

2 cups of oats

3 tbsp linseeds

2 tbsp pumpkin seeds


Method

👉Preheat the oven to 180C

👉Mash the bananas

👉Remove stones and chop dates

👉Add all ingredients to a bowl except for the honey and mix thoroughly

👉line a baking tray with baking paper

👉Add the mixture to the baking tray, spreading it evenly

👉Drizzle the honey over the top

👉Place in the oven for 15 minutes
