Spot the sprout
So brussel sprouts aren’t the top favourite vegetable in our house ..............but coleslaw is always a popular dish, so I’ve hidden 8 of the little gems in amongst this colourful mixture of broccoli, red pepper, red onions and carrots.
This is an easy way of packing in over 5 vitamins including vitamin c, folate, beta-carotene and vitamin k not to mention fibre and magnesium too.
1 carrot grated
Sliver of garlic chopped
1 slice of red onion chopped finely
1 medium red pepper chopped
3 florets of broccoli chopped
1 tbsp of mixed seeds
1 dessert spoon of olive oil
1 dessert spoon of apple cider vinegar
1/2 tsp sumac
Prepare and mix together. Add mayonnaise if you prefer, otherwise apple cider vinegar and olive oil serve well as the dressing.
