A simple Gazpacho Soup like this is full of antioxidants such as vitamin C.
Antioxidants fight off free radicals which can be harmful to your body, causing damage to your DNA and other parts of your cells. This cooling soup is my quick blended version of the antioxidant rich traditional Spanish Gazpacho. It’s perfect for a sunny lunch, bursting with flavour from the fresh, raw tomatoes, onions and peppers. Top with eggs, croutons and chopped vegetables for a filling lunch.
Recipe
*800g tinned tomatoes
*1 red pepper roughly chopped
*1/2 green chilli pepper deseeded
*2 cloves of garlic
*2 tbsp of virgin olive oil
*1.5 tbsp red wine vinegar
*Sprinkle of salt and pepper
Method
☀️ Blend all ingredients together
☀️ Leave in the fridge for the flavours to infuse if you have time, otherwise eat straight away
☀️ Top with chopped boiled eggs, croutons, peppers, onion and cucumber
