Make the most of our seasonal apples by adding them to a vibrant and tasty slaw.
Ingredients
1 medium apple, grated
1/4 red cabbage, grated
1 large carrot, grated
1 garlic clove, minced
1/2 handful of pumpkin seeds
1 tbsp virgin olive oil
3 tbsp of apple cider vinegar
1 tbsp wholegrain mustard
Sprinkle of chili flakes (optional)
Method
Grate the apple, cabbage and carrot
Add all the ingredients to a bowl and mix thoroughly
If you have time, leave the slaw for 30 minutes to settle so that the flavours can develop.
Serve as the vegetable portion of your meal or add as a side dish.
