Autumn Traybake Soup
Traybake Autumn Soup – this is the best recipe to warm you up on a windy day.
Butternut squash, peppers, courgettes and onion are roasted until soft then pureed with cannellini beans into a naturally sweet and creamy soup with sage, rosemary & bay leaf added for another flavour dimension.
You can top with toasted pumpkin seeds for a top of magnesium and crunch & if you like a bit of heat, add a dash of tabasco.
This soup is perfect for batch cooking ready for sustaining lunches during the week.
It’s also a nutritional all-rounder providing an array of nutrients to nourish your body. The protein and fibre from the beans will help to prevent those pesky mid afternoon energy dips & the fibre also doubles up to support your gut and hormones
On top of this… the vitamin C rich peppers, the beta carotene from the squash & allicin from the garlic bolster your immune system.
