I love this gluten free mediterranean socca flatbread, it’s both delicious and quick to make, so a real winner. I’m enjoying mine with manchego cheese, sauerkraut and salad for lunch today. You can make it advance. Just keep it in the fridge and pop it in the toaster for a quick lunch or snack. I like a kick of chili to mine, but you can remove the spices if they aren't to your liking. Ingredients 1 cup of gram flour 1 cup of water 2 tsp virgin olive oil 1/2 tsp nigella seeds 1/2 tsp chilli seeds 1/2 tsp onion granules 1/2 tsp garlic granules Sprinkle of sea salt Method 🟡Preheat the oven to 200C 🟡Mix the ingredients together well 🟡Leave the batter to rest for 30 minutes 🟡Mix again to remove lumps of flour 🟡Heat up a cast iron pan with a splash of virgin olive oil 🟡Pour the mixture into the pan and grill for 5 minutes 🟡Place the pan in the oven and cook for 12-15 minutes 🟡Lift the socca from the pan with a spatula and enjoy warm. #glutenfree #socca #lunch #ibs #ibs2020 #meditteraneanfood #meditteranean #manchego #colchester #essex #nutrition #nutritionist
